Yes, but please note you need an admin account to do this.
To customize fields displayed in the Edit values for fields screen, go to the Scan to Salesforce tab > gear icon > open Admin Settings > Transfer settings > enable Allow users to overwrite values for fields.
When the above setting is completed, click the Field settings button and check Edit on every transfer to complete display settings for each field.
*By default, some standard fields and all custom fields will appear on the Edit values for fields screen.
