Can I individually edit field values for Leads and Contacts?

Yes, but please note you need an admin account to do this.

Admins can allow users to overwrite values for fields so that users can edit the fields before transferring business card data to leads.

To set this up, go to Scan to Salesforce tab, then the gear icon, and put a check next to Allow users to overwrite values for fields.

You can edit fields displayed in the Edit values for fields screen.
